Recipe for sweetly simmered black beans

Ingredients
Tanba black beans (dried) 200g
1.2L water
200g sugar
½ teaspoon salt
1½ tablespoons soy sauce
A few rusty nails or iron balls (wrapped in cloth) to prevent discoloration

Preparation
Gently wash the black beans and place them in a large pot with water and add the iron balls (or nails).
Leave to soak overnight (6 to 8 hours).
Boil
The next day, add sugar and salt, bring to a boil over medium heat and skim off the scum.
Reduce heat to very low, cover and simmer for about 4 hours (add more water if required).
When the beans are soft enough to be crushed with your fingers, remove the iron balls, add soy sauce and turn off the heat.
cool
Allow the beans to cool in the cooking liquid.
Once cooled, press a piece of baking paper over the surface and leave in the refrigerator overnight or longer to allow the flavors to soak in.
Presentation
Serve in a bowl and decorate with gold leaf to give it a New Year's feel.
